Prepare the curry paste by roughly chopping 3 garlic cloves.
Roughly chop 25 g of fresh ginger.
Take 1 red chili, remove the seeds for less spice, and roughly chop it.
Place chopped garlic, ginger, and chili into a jug or bowl.
Add 20 g of fresh coriander, including the stalks, to the jug.
Chop and add 1 small brown onion to the jug.
Add 5 g of mild curry powder, 4 g of ground turmeric, 2 g of ground cumin, and a pinch of salt to the jug.
Pour in 50 ml of water and blend the mixture using an immersion blender, food processor, or pestle and mortar to create the curry paste.
Set the curry paste aside.
Prepare 500 g of cod by cutting it into large chunks along the natural seams of the fillet.
Place a frying pan or skillet over medium heat and pour in the curry paste.
Heat the curry paste for 3 to 5 minutes to release the flavors.
Pour in 400 ml of coconut milk and stir to combine, bringing it to a simmer.
Add 20 g of sugar, 10 ml of soy sauce, and the juice of 1 lime to the mixture, stirring well.
Allow the mixture to simmer for 5 minutes before adding the fish.
Gently place the fish into the pan and reduce the heat to low, allowing it to poach in the sauce for 5 to 8 minutes until it flakes easily.
Remove from heat and serve the coconut fish curry, garnished with freshly sliced chili, coriander, and a wedge of lime.
