Preheat the oven to 180°C (350°F).
Peel and chop the root vegetables into small pieces.
Boil the chopped root vegetables in salted water until tender, about 15-20 minutes.
Drain the vegetables and mash them in a bowl.
Mix in coconut milk, diced meat, chopped onion, minced garlic, and spices until well combined.
Lay out banana leaves on a flat surface.
Spoon the mixture onto the banana leaves and fold them securely to create parcels.
Place the parcels in a baking dish and cover with additional banana leaves.
Bake in the preheated oven for 45-60 minutes until cooked through.
Remove from the oven and let cool slightly before unwrapping.
Serve warm, garnished with lime juice and fresh herbs.
