Ingredients

Instructions

  1. 1Boil water in a large pot.
  2. 2Add elbow macaroni and cook until al dente.
  3. 3In a separate saucepan, melt butter over medium heat.
  4. 4Stir in flour to create a roux, cooking for a minute.
  5. 5Gradually whisk in milk, stirring until thickened.

  • 2 slices rye bread
  • 2 oz corned beef, sliced
  • 2 oz Swiss cheese, sliced
  • 1/4 cup sauerkraut, drained
  • 2 tbsp Russian or Thousand Island dressing
  • 2 tbsp butter

Instructions

  1. 1Heat a skillet over medium heat.
  2. 2Spread 1 tablespoon of butter on one side of each slice of rye bread.
  3. 3On the unbuttered side of one slice, layer the corned beef, Swiss cheese, and sauerkraut.
  4. 4Spread the dressing on the unbuttered side of the other slice of bread and place it on top of the sauerkraut, dressing side down.
  5. 5Butter the top slice of bread.
  6. 6Carefully flip the sandwich in the skillet and cook until the bottom is golden brown, about 3-4 minutes.
  7. 7Butter the top side of the sandwich and flip it again to cook the other side until golden brown and the cheese is melted, about another 3-4 minutes.
  8. 8Remove from skillet and let it cool for a minute before slicing in half.
  9. 9Serve warm with extra dressing on the side.

  • 3 cups potatoes, thinly sliced
  • 1 cup onion, finely chopped
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream

  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup breadcrumbs
  • 2 tbsp butter, melted

Instructions

  1. 1Preheat the oven to 350°F (175°C).
  2. 2In a greased baking dish, layer half of the sliced potatoes evenly on the bottom.
  3. 3Spread half of the shredded corned beef over the potatoes, followed by half of the chopped onions.
  4. 4Sprinkle half of the cheddar cheese over the meat and onions.
  5. 5In a bowl, mix together the heavy cream, milk, garlic powder, salt, and black pepper. Pour half of this mixture over the layered ingredients in the baking dish.
  6. 6Repeat the layers with the remaining potatoes, corned beef, onions, and cheese, then pour the remaining cream mixture on top.
  7. 7Sprinkle breadcrumbs evenly over the top layer and drizzle with melted butter.
  8. 8Cover the baking dish with aluminum foil and bake for 45 minutes.
  9. 9Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
  10. 10Let it cool for a few minutes before serving.
