1/2 tsp red chilli flakes
1/2 tsp paprika powder

Boil water in a saucepan.

Add 1 cup of elbow macaroni, 1 tbsp of oil, and a little salt to the boiling water.

Cook the macaroni for about 8-9 minutes, stirring periodically.

Drain the macaroni, retaining some pasta water for later use.

In a pan, heat 3 small cubes of butter over low heat until melted.

Add 1 tbsp of finely chopped garlic and sauté lightly (optional).

Stir in 1 1/2 tbsp of plain flour and cook on low heat until it slightly changes color.

Gradually add 1 cup of milk in parts, mixing to avoid lumps.

Once the flour is mixed well with the milk, let it cook for about 2 minutes.

Add 2 tbsp of grated parmesan cheese and 2 tbsp of mozzarella cheese, mixing well.

Add 1/2 cup of the retained pasta water and 1 tbsp of mustard sauce, along with pepper to taste, and mix.

Add the cooked macaroni to the sauce and mix well, ensuring it is saucy enough.

Transfer the mixture to a baking dish and bake in a preheated oven at 160 degrees for 20 minutes, checking after 10 minutes.

In the meantime, prepare the breadcrumb topping by melting a dollop of butter in a pan.

Add 1 1/2 cup of bread crumbs to the melted butter and sauté for a few seconds to toast them.

Mix in 1/2 tsp of red chilli flakes and 1/2 tsp of paprika powder, then turn off the flame and let it cool completely.

After 10 minutes of baking, remove the mac and cheese from the oven and mix in 2 tbsp of parmesan cheese with the breadcrumb mixture.

Top the mac and cheese with the breadcrumb mixture and return it to the oven for another 10 minutes.
