1 tsp oyster sauce
2 tbsp water
1/2 cm julienned ginger (optional)
1 tsp oil (for beef)

2 tsp soy sauce (for soy sauce)
1 tsp fish sauce
1/2 tbsp water (for soy sauce)
1 tsp peanut oil (for clay pot)
1 tbsp oil (for crust)

Soak 210g jasmine rice in hot boiled water for 30 minutes.

Prepare beef topping by slicing 100g loin against the grain and mixing with 1/4 tsp Kan Sui, 1/4 tsp salt, 1/4 tsp sugar, 1 tsp cornstarch, 1/8 tsp black pepper, 1/4 tsp soy sauce, 1/2 tsp dark soy sauce, 1/2 tsp Shaoxing wine, 1 tsp oyster sauce, and 2 tbsp water.

Add optional 1/2 cm julienned ginger and 1 tsp oil to the beef mixture and set aside.

Mix together 1/4 tsp sugar, pinch of MSG, 2 tsp soy sauce, 1 tsp fish sauce, and 1/2 tbsp water to create seasoned soy sauce and set aside.

After soaking, pour 1 tsp peanut oil into the clay pot and rub it evenly.

Add soaked rice and soaking water to the clay pot, jiggle to even it out, and cover.

Cook on medium heat for 6-7 minutes until strong steam comes out, then let it go for an additional 30 seconds to 1 minute until no water is left.

Drizzle 1 tbsp oil along the edge of the pot to enhance the crust.

Place the pot in a preheated oven at 230C for 20 minutes.

After 15 minutes, remove the pot and evenly spread the beef topping on the rice, leaving a hole in the center for the egg.

Return the pot to the oven to finish cooking for the remaining 5 minutes.

Once done, drizzle the seasoned soy sauce over the rice.

Tilt the pot on medium-high heat for 30 seconds on each side to create a crust (optional if stove is flat).

Shut off the heat, add 1 egg in the center, cover, and let sit for another minute.

Sprinkle scallions on top for garnish and serve.
