Romanian Pilaf with Fried Chicken

Wash 2 cups of rice in a few waters and let it soak.

In a stock pot, pour 3 litres of cold water along with washed and cleaned chicken legs, 1 tsp all purpose seasoning, 1 onion cut into quarters, 1 carrot peeled and cut in half, and 3 garlic cloves. Bring to a simmer and collect any foam that forms on top.

When the chicken is boiled, remove it to a colander to drain. Set aside. Dispose of the onion and carrot.

In a non-stick pot, heat up 2 tbsp of oil and add the chopped onion; fry for 5 minutes.

Add minced garlic and let it get fragrant for about 1 minute.

Stir in 2 tbsp of tomato paste and grated carrot; fry for 3-4 minutes.

Stir in the soaked rice and fry for 3 minutes.

Pour in 6 cups of the chicken stock, season with 1 tsp of all purpose seasoning, and turn the flame to low to cook the rice. Keep an eye on it and add more water/stock if necessary.

When the rice is cooked, season with black pepper, more salt if needed, and add dill and fresh parsley. Cover and set aside.

To fry the chicken, heat oil in a pan and fry for 8-10 minutes on each side, seasoning with salt and pepper or chicken seasoning as desired.
