Slowly pour the liquid mixture into the semolina, stirring constantly to prevent lumps.
Add vanilla extract, cinnamon, and cardamom; mix well.
Cook for an additional 5-7 minutes until the mixture thickens and pulls away from the sides.
Remove from heat and fold in lemon zest, raisins, and nuts.
Transfer to a greased dish and smooth the top with a spatula.
Let cool for at least 30 minutes before slicing into squares.
Serve warm or at room temperature, garnished with additional nuts if desired.
