Welcome to the recipe for fried fish and express casamiento.
For the fish, use tilapia or your preferred fish.
Season the fish with 1 teaspoon of chicken bouillon, 1/2 teaspoon of dried oregano, 1/4 teaspoon of onion powder, 1/4 teaspoon of garlic seasoning, and 1/4 teaspoon of mixed spices (black pepper and cumin).
Add 1 teaspoon of salt and the juice of 1/2 sour orange, along with 1 garlic clove, to the fish.
For the rice, start by adding a little oil to a pan and sautéing the washed rice until golden brown.
Add 3/4 cup of water and a pinch of salt, cover, and cook on medium-low heat.
Prepare the fish seasoning by grating the garlic and mixing it with the sour orange juice and the dry spices.
Coat the fish in seasoned flour made with flour, garlic seasoning, spices, and salt.
Heat oil in a pan until hot, then fry the fish for 1-3 minutes on each side to seal the coating.
Once the fish is golden, reduce the heat to medium-low to ensure it cooks through without burning.
After the rice is cooked, sauté the previously mentioned vegetables in a bit of oil.
Add the cooked rice and beans to the sautéed vegetables, seasoning with a little salt and soup to integrate flavors.
The fish is now ready to be served, and you can fry plantain slices in the same oil for added flavor.
Serve the dish with pickled vegetables and tortillas.
