Add 2 cups of rolled oats to a bowl.

Add a little bit of salt to the oats.

Add nutmeg to the oats and mix to combine.

Add cashew nuts and optional almonds to the mixture and mix everything together.

In another bowl, add honey and coconut oil (2 tablespoons).

Add brown sugar to the honey and coconut oil and mix thoroughly until well combined.

Combine the wet mixture with the dry mixture (oats and nuts) and mix until the consistency is not too wet or too dry.

Line the mixture in an air fryer oven or regular oven, ensuring it is laid flat for even cooking.

Set the air fryer oven to bake for 5 minutes.

After 5 minutes, add coconut flakes to the mixture and bake for another 5 minutes until the coconut flakes are browned.
