Desalt the cod for 48 hours.

Cut the fins and clean the scales of the cod.

Remove the tight parts and cut out the spines, saving the cut parts to freeze.

Preheat the oven to 200ºC (390ºF).

Take small potatoes with skin and drizzle a little olive oil on them, reserving the rest of the oil.

Season the potatoes with salt and pepper.

Bake the potatoes for 20 minutes at 200ºC (390ºF).

Cook the shredded onion in the reserved olive oil for a few minutes until it begins to soften.
