Preheat the oven to 425 degrees Fahrenheit.
In a large bowl, add 4 tablespoons of melted unsalted butter and 1/4 cup of canola or vegetable oil.
Add 1 cup of granulated sugar and whisk until well combined.
Add 1 large room temperature egg and 1 large room temperature egg white, then stir until combined.
Add 1.5 teaspoons of pure vanilla extract and stir until combined.
Stir in 1/2 cup of buttermilk and set the wet ingredients aside.
In a separate medium bowl, combine 1 and 3/4 cup of all purpose flour, 2 teaspoons of cornstarch, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Stir until combined.
Gently fold the flour mixture into the wet ingredients until halfway combined.
Add 1.5 cups of your favorite add-ins (e.g., chocolate chips and chopped walnuts) and gently stir until well distributed.
Optionally, cover the batter with a clean towel and let it sit for 15 minutes to an hour to rise.
Line a muffin tin with paper liners or grease and flour the cavities.
Scoop the batter into the muffin liners using an ice cream scoop, filling each about 3/4 full.
Optionally, sprinkle a little turbinado sugar on top of each muffin.
Bake in the preheated oven at 425 degrees Fahrenheit for 8 minutes.
Without opening the oven door, reduce the temperature to 350 degrees Fahrenheit and bake for an additional 12 minutes.
Check for doneness by inserting a toothpick; it should come out clean or with a few moist crumbs.
Remove the muffins from the oven and let them cool.
