Red Chile

3 and 1/2 lb boneless cross rib steak, cut into small pieces

1/4 cup New Mexico chili powder
1/2 cup diced onion
3 minced garlic cloves
2 and 1/2 to 3 cups water
1 tablespoon chicken bouillon
1 tablespoon flour
ground cumin

Set the pressure cooker to sauté over medium-high heat.

Drizzle in 1 teaspoon of oil.

Add 3 and 1/2 lb of boneless cross rib steak cut into small pieces and break it up a bit.

Sprinkle in salt and 1/4 cup of New Mexico chili powder, and mix to coat the meat.

Add in 1/2 cup of diced onion and 3 minced garlic cloves, and mix again.

Let the mixture cook for 10 minutes or until all the juices from the meat are gone.

Pour in 2 and 1/2 to 3 cups of water or enough to cover the meat.

Sprinkle in 1 tablespoon of chicken bouillon, 1 tablespoon of flour, ground cumin, and oregano, and mix everything well.

Turn off sauté mode and lock on the lid.

Ensure the valve is set to seal and pressure cook on high for 25 minutes.

Once done, carefully set the valve to vent and let it vent until the pin drops and there's no more steam.

Remove the lid and serve the red chili.
