8 guajillo chile peppers, boiled and deseeded
3 cups chicken broth
3 cloves garlic
1/4 onion
1 teaspoon Mexican oregano
1/2 tablespoon chicken bouillon
1 tablespoon oil
1/2 teaspoon cumin
1 1/4 cup tomato sauce
2 cups hominy
3 bay leaves
1 cup water
cilantro

queso fresca cheese
lime slices

Cut pork into 1 inch cubes.

Sear pork tenderloin in 1-2 tablespoons of oil in large pan until golden and add to crockpot.

Pour blended chile pepper mixture to crock pot over meat, add a bit of water to get all the chile mixture from blender, and extra for desired consistency (1 cup used).

Cover crock pot and cook on high for 4-6 hours or low for 8 hours.
