Cassava Bread

300g of cassava
125ml of milk
1/2 tbsp instant yeast
1 Tbsp of sugar
25g butter
1 whole egg
1/2 tsp salt
350g Flour
Semolina (optional)
Egg yolk for brushing

Cook the cassava until soft in a pressure cooker for 15 minutes.

Remove from water and drain.

Remove the core from the cassava and mash until free of lumps.

Add milk and mix well.

Add butter and mix until completely melted.

Ensure the mixture is warm to the touch before adding the egg, then add the egg and mix.

Add sugar and salt and continue to mix.

Gradually add flour and mix until combined.

Transfer to a floured bench and knead for about 8 minutes to form a smooth dough, adding more flour if necessary.

Transfer back to a bowl, cover, and let it rise for 1 hour.

Sprinkle semolina on the bench, open the dough into a rectangle, and roll it to the size of your bread mold.

Let it rise for another hour in a warm place.

Bake in a hot oven at 180C / 356F for about 45 minutes.

Let it cool down before slicing.
