Make Homemade Tortellini with the Atlas Pasta Maker

This dish is a staple during festive occasions, especially in Bologna, where it is associated with family gatherings and celebrations. Today, tortellini has gained global popularity, with many variations emerging, including vegetarian options.

Add 4 cups of flour to a large mixing bowl and create a well in the center.
Crack 6 fresh eggs into the well of the flour.
Use chopsticks, a fork, or your hands to mix the flour and eggs together until it starts to come together.
Knead the dough in the bowl until smooth and shiny, adding a touch of water if necessary to avoid sogginess.
Cut the dough into quarters to make it easier to knead, and knead each piece until smooth.
Dampen a kitchen towel and cover the dough with it to let it rest for 30 minutes.
Set up the Atlas pasta maker and roll out a piece of dough on the Zero setting.
Fold the rolled dough in thirds and run it through the pasta maker a couple of times.
Continue passing the dough through the pasta maker, adjusting the settings until you reach the number 6 setting.
Cut the rolled pasta into circles.
Place a teaspoon of fresh goat cheese in the center of each pasta circle.
Dip your finger in water and coat half of the edge of the circle, then fold it over the cheese and press the edges together.
Gather the corners of the folded dough around the cheese and press them together to form tortellini.
Bring a large pot of water to a rapid boil and add a healthy helping of salt.
Add the tortellini to the boiling water and stir gently; cook for 5 to 6 minutes until done.
Drain the tortellini and add your favorite sauce, in this case, Rao's marinara sauce, and top with more goat cheese.
