400g pork (cut into thin slices)
1 tbsp cornflour
1/2 tsp baking soda
Few dashes white pepper
1.5 tbsp light soy sauce
3 stalks spring onion (2" length)
2 thumb size ginger (strips)
1 small chilli (strips)
2 cloves garlic (chopped)
3 tbsp cooking oil (for pan frying)
2 tbsp dark sweet soy sauce
2 tbsp oyster sauce
1 tsp sugar
2 tbsp shaoxing wine
1 tbsp sesame seed oil
130ml water + 1 tbsp cornflour
