In a large pot, boil water and cook noodles or spaghetti until al dente, about 5-7 minutes. Drain and set aside.

In a separate pot, heat oil over medium heat and sauté chopped onion, ginger and garlic paste until fragrant, about 3-4 minutes.

Add cumin, coriander, chilli powder, and turmeric powder, stirring for 1 minute to toast the spices.

Add chopped tomato and cook until soft.

Pour in coconut milk and creamed coconut, bringing to a simmer.

Add chicken pieces and cook until fully cooked through, about 10-12 minutes.

Stir in fresh chilli paste and adjust seasoning to taste with salt.

Serve noodles in bowls, ladle the coconut curry over the top.

Garnish with lime juice, chopped coriander, spring onions, grated ginger, chopped chillies, red onion, dried onions, and dried pur/ Samosa leaves.
