Melt 1 cup of peanut butter in a bowl over a water bath.
Stir the peanut butter as it melts until it becomes loose.
Add 1/2 cup of raw honey to the melted peanut butter and mix until well combined.
Add 2 tablespoons of unsweetened cocoa powder, 1/2 tablespoon of cinnamon powder, and 1 teaspoon of salt to the mixture and mix well.
Add 3 cups of rolled oats, 1/2 cup of pumpkin seeds, and 1/2 cup of sunflower seeds to the mixture and mix vigorously.
Add 3/4 cup of unsalted and unroasted macadamia nuts and mix until well combined.
Line a large baking tray with baking paper and spread the granola mixture evenly on the tray.
Bake in a preheated oven at 180°C for 25 to 30 minutes.
After 15 minutes, take the granola out, mix it around, and sprinkle in some coconut flakes.
If using roasted nuts, add them at this point and return to the oven for another 15 minutes.
Once done, take it out and add dried fruit (mangoes, pineapples, bananas, figs) and top with dark or white chocolate chips.
Let the granola cool completely, then mix everything around and break down any large pieces.
Store the granola in a dry and airtight container.
