Focaccia, originating from ancient Rome, was traditionally baked in the ashes of the hearth and served as a staple for Roman soldiers. This versatile bread is often enjoyed with meals or as a snack, showcasing the simplicity of Italian cuisine. Today, focaccia is celebrated worldwide, with countless variations featuring different toppings, reflecting local tastes and ingredients.

In a large bowl, add 500 grams of strong flour, 12 grams of fresh yeast, and 1 teaspoon of honey.
Start with 350 grams of lukewarm water and gradually add more if necessary, totaling 380 grams.
Add 2 tablespoons of extra virgin olive oil and 2 teaspoons of salt; mix until the dough appears smoother.
Cover the bowl and let it rest for half an hour.
After half an hour, fold the dough inside the bowl until it looks smoother and stronger; cover again and let it rest for 1 hour.
After 1 hour, the dough has doubled in size; fold it a couple of times with greased hands.
Transfer the dough to a generously greased baking tray, folding it and coating the surface with oil.
Cover the tray with plastic wrap and let it rise for 30-45 minutes.
Preheat the oven to the highest temperature in conventional mode, moving the rack to the lowest position.
Press the dough starting from the center and moving towards the edges, leaving dimples visible.
Add a little more oil, a bit of water, and some coarse salt on the surface.
Bake for about 15-20 minutes until golden brown, preferring 20 minutes for a crispy crust.
Transfer to a wire rack and let it cool for 10-15 minutes.
