Use a stand mixer with a dough attachment.
Measure and add 6.25 cups of bread flour to the mixing bowl.
Measure and add 2.5 cups of room temperature water to the flour.
Add 1.5 teaspoons of sugar to the mixture.
Turn the mixer on low and mix for about 3 minutes until the dough is shaggy and sticky.
Cover the bowl with a kitchen towel and set aside.
In a separate bowl, heat half a cup of water in the microwave for 15 seconds until it reaches 90-105°F.
Add one package of active yeast to the warm water along with 1.5 teaspoons of sugar.
Whisk the mixture until combined and let it sit for 8-10 minutes until foamy.
After the yeast is foamy, add it to the shaggy dough in the mixer in increments while mixing on low.
Once incorporated, use your hands to mix the dough if it remains too wet and sloppy.
Add 1 tablespoon plus 1.5 teaspoons of kosher salt to the dough.
Mix on medium speed for about 5 minutes until the dough is well combined.
