Mix all dry ingredients: flour, icing sugar, spice mix, baking soda, and salt.
Add wet ingredients and combine everything together with your hands.
Knead the dough gently for about a minute or two and form it into a ball.
Let the dough rest in the fridge for at least 2 hours.
Roll out the dough to about half a cm thick.
Use cookie cutters to cut into desired shapes.
Bake at 170°C for about 5 minutes, keeping an eye on them.
Once cooled, prepare royal icing using pasteurized egg whites and icing sugar.
Mix egg whites with half of the icing sugar until smooth, then gradually add the rest of the sugar and beat until thick and glossy.
Decorate cookies with royal icing and gel colors as desired.
