Slovenian Crepes with Cheese Filling

Beat 2 whole eggs and 7 oz of milk until combined.
Gradually add 240 g of all-purpose flour, 1 tbsp at a time.
Add a pinch of salt and mix until thick.
Gradually add 200 ml of sparkling water until well combined.
Cover the bowl with plastic wrap and refrigerate for 1 hour.
In a bowl, combine 250 g of ricotta cheese, 100 g of sour cream, 1 egg, 2 tbsp of sugar, and 1 tbsp of breadcrumbs. Blend until smooth.
Preheat the oven to 400°F.
Brush a pan with oil and start making the crepes, using 1-2 tbsp of batter for each crepe.
Roll the crepes and place them in a greased baking dish.
Spoon any leftover cheese filling over the crepes and sprinkle with vanilla sugar.
Bake in the oven for 15 minutes.
