200 Gram lentils
90 Gram goat cheese
500 Milliliters chicken broth
50 Milliliters olive oil
2 Pieces celery stalk
1 Piece carrot
1 Piece bay leaf
1-2 Pieces parsley (twigs)
2 tablespoons lemon juice
0.5 teaspoons dry ground thyme
1 teaspoon Dijon mustard
1 teaspoon honey
0.5 teaspoons salt
0.25 teaspoons ground black pepper

Rinse the lentils and place them in a pot with chicken broth, bay leaf, and garlic. Bring to a boil and then simmer until tender.

While the lentils are cooking, chop the celery and carrot into small pieces.

In a bowl, mix olive oil, lemon juice, Dijon mustard, honey, thyme, salt, and pepper to create a dressing.

Once the lentils are cooked, drain them and remove the bay leaf and garlic.

Combine the lentils with the chopped celery and carrot, then pour the dressing over the mixture.

Crumble the goat cheese on top and garnish with parsley twigs before serving.
