Mediterranean Lentil Salad

1 cup lentils
1/2 red onion
1/2 cucumber
1/2 lemon
1/2 red pepper
1/2 yellow pepper

1/4 tsp oregano
1 tsp maple syrup or honey

In a pan, add 1 cup lentils and water, then bring to a boil until cooked, then drain and set aside.

In a small bowl, make the dressing by combining 2 tbsp olive oil, 1/4 tsp oregano, 1 tsp maple syrup or honey, salt, and black pepper to taste, then squeeze in the juice of 1/2 lemon.

Chop the red onion, cucumber, tomato, red and yellow peppers, and parsley.

In another bowl, combine the chopped vegetables and the cooked lentils, then drizzle with the dressing and toss until combined.

You can serve right away or let it sit for 30 minutes to meld the flavors.
