Today I will show you how to make two different versions of shrimp chachi tacos: a keto version and a carnivore version.

For the salad, cut the Roma tomato in half, then each half into quarters, and cut into small sections.

Transfer the cut tomato pieces into a salad bowl.

Dice the red onion into very small pieces and add to the salad bowl.

Remove the cilantro leaves from the thick stems, roll them into a tube shape, and chop roughly before adding to the salad bowl.

Cut the avocado in half, remove the pit, and cut into cubes while in the shell; scoop out and add to the salad bowl.

Season the salad with salt and pepper, then drizzle olive oil on top and toss to combine; set aside to develop flavors.

Place a skillet over medium heat and add butter; let it melt.

Add freshly chopped garlic to the melted butter and stir for 30 to 60 seconds until fragrant.

Add the medium-sized clean shrimp to the skillet and sauté, tossing frequently until all sides are light pink and cooked through, being careful not to overcook.

Transfer the cooked shrimp to a cool plate using a slotted spoon to prevent overcooking.

Optionally, sprinkle fresh lemon juice over the shrimp and toss.

For the carnivore version, drizzle Frank's Red Hot sauce over the shrimp and toss well.

To assemble, place a carnivore crepe or keto tortilla on a platter.

Dollop sour cream in the center of the crepe or tortilla and spread it out, leaving a clean perimeter.

For the keto version, add 1/2 cup of the Mexican avocado and tomato salad on top of the sour cream; omit for the carnivore version.
