Crack 3 eggs into a mixing bowl.
Add salt to taste, black pepper to taste, and a pinch of crushed red pepper to the eggs.
Mix the egg mixture well.
Chop 10g of green onion and add it to the egg mixture; mix well again.
Heat 1 tablespoon of unsalted butter in a skillet over medium low heat.
Slice 1 tomato and place the tomato slices in the pan.
Add some white sugar (optional) to the tomatoes in the pan.
Pour the egg mixture over the tomato slices in the pan.
Sprinkle some mozzarella cheese on top of the egg mixture.
Cover the skillet and cook for 3-5 minutes.
