Add 1 cup of chickpea flour to a mixing bowl.
Add 1/2 finely chopped onion, 1 small finely chopped tomato, chopped coriander leaves, 1/2 teaspoon red chili powder, 1 finely chopped green chili, 1 teaspoon chopped ginger, and 1/4 teaspoon turmeric powder to the bowl.
Mix all the dry ingredients together and break any lumps in the chickpea flour.
Add water gradually, blending using a hand mixer until the batter is lump-free; approximately 1 cup of water should be added.
Ensure the batter has a consistency similar to dosa batter, not too thick or watery.
Heat a pan and add oil; more oil is added for a spongier texture.
Pour the batter into the pan and spread it slightly; cover and let it fry.
Check the omelette and turn it to fry the other side until both sides are well done and crispy.
Remove the omelette from the pan and place it on a plate; repeat the process for a second omelette, adding more oil as needed.
Serve the vegetable tomato omelette with tomato ketchup or hot sauce.
