Cultural Context
Originating from the Liguria region of Italy, walnut pesto is a variation of the classic basil pesto. Traditionally made with pine nuts, this version showcases walnuts, offering a rich and earthy flavor. It is often used as a pasta sauce or a spread, embodying the Italian principle of using simple, high-quality ingredients to create delicious meals. Today, walnut pesto is enjoyed globally, with many variations including different nuts and herbs.

π°Cheaper: grated pecorino
Nutritional yeast is lower in calories and dairy-free.
Harvest 2 cups of basil from the garden.
Grate 1/2 cup of parmesan cheese.
Measure out 1/2 cup of walnuts.
Peel and prepare 3 cloves of garlic.
Zest 1/2 lemon and add the zest to the mixture.
Juice 1/3 of the lemon and add the juice to the mixture.
Measure out 2/3 cup of extra virgin olive oil, but do not add it all at once.
Combine all ingredients (basil, parmesan, walnuts, garlic, lemon zest, lemon juice) in a Ninja blender.
Start blending the mixture, pulsing as needed to get it going.
Add the olive oil gradually, adjusting the amount as needed for desired consistency.
Add garlic salt to taste, as the mixture may need more flavor.
Pulse the mixture a few more times to combine everything well.
