Roll out a piece of dough into an even sheet about 1/4 of an inch thick.

Holding the dough loosely, gently twist and slide the ferretto out, leaving behind a hollow tube.

Transfer the hollow tube to a semolina dusted tray and repeat with the remaining dough.
