Christmas Pudding

2 1/2 cups raisins
2 1/2 cups golden raisins
4 cups bread crumbs
2 1/2 cups brown sugar
1 cup lard
1 tablespoon candied peels

1 carrot, grated
1 apple, diced
1 tablespoon flour
1 teaspoon pumpkin pie spice
6 eggs
1 1/4 cups Guinness
A pinch of salt
Butter (for greasing the bowl)
Holly sprig and fruit (for decoration)

In a big bowl, combine all the pudding ingredients: raisins, golden raisins, currants, bread crumbs, lard, brown sugar, candied peels, orange and lemon rind, grated carrot, chopped cherries, chopped almonds, pumpkin pie spice, flour, diced apple, and a pinch of salt. Mix it all up well!

In a separate bowl, beat the eggs lightly with a fork. Then, add the beaten eggs and Guinness to the dry mixture and mix everything together with your hands or a spoon.

Grease a heatproof bowl with butter. Press the pudding mixture into the bowl.

Cover the bowl with baking paper and then tin foil. Tie a string around the bowl to keep everything in place. Put the bowl in a saucepan that's half-filled with water. Make sure the bowl doesn't touch the bottom of the pan!

Turn the heat up high and bring the water to a boil. Then, turn the heat down low and let the pudding cook for 4-5 hours. Keep checking the water level to make sure it doesn't boil away.

Once the pudding is cooked, take it out of the water and let it cool completely. Then, carefully turn it upside down onto a plate. Top it with the yummy vanilla custard you made earlier, and decorate it with a holly sprig and some colorful fruits.
