Portuguese Peas with poached eggs and chouriço

1 medium onion
4 cloves of garlic
75 grams Portuguese chouriço
1 bay leaf
50 ml extra virgin olive oil
600 grams green peas
1 teaspoon salt
1/2 teaspoon pepper
450 ml water
coriander (to taste)

Chop 1 medium onion and peel 4 cloves of garlic.

Add 75 grams of Portuguese chouriço and 1 bay leaf to a pan.

Pour in 50 ml of extra virgin olive oil and sauté over low heat for 6 to 7 minutes.

Add 600 grams of green peas, 1 teaspoon of salt, and 1/2 teaspoon of pepper.

Pour in 450 ml of water and bring to a boil over medium-high heat.

Once boiling, reduce to medium-low heat and simmer for 25 minutes.

Remove the bay leaf.

Add coriander to taste.

Crack 4 eggs into the pan and season with salt if necessary.

Cook the eggs for 7 to 8 minutes and then turn off the heat.
