Heat olive oil in a large pot over medium heat until shimmering.

Add sliced chouriço and cook until browned, about 3-4 minutes.

Stir in chopped onion and minced garlic; sauté until softened, about 5 minutes.

Add diced carrots and potatoes; cook for another 5 minutes, stirring occasionally.

Pour in vegetable broth and add bay leaves; bring to a boil.

Reduce heat to a simmer and cook until potatoes are tender, about 15 minutes.

Stir in green peas and season with salt and black pepper; cook for an additional 5 minutes.

Create small wells in the mixture and crack an egg into each well.

Cover the pot and cook until eggs are set to your liking, about 5-7 minutes.

Remove from heat and discard bay leaves.

Garnish with chopped parsley before serving.
