Start by preparing the mushrooms. Clean them thoroughly and slice them into thin pieces.

Chop the Chinese chives into small sections.

Cook the udon noodles according to the package instructions. Usually, this involves boiling them in water for a few minutes until they are tender. Once cooked, drain and set aside.

In a small bowl, mix the starch with 4 tablespoons of water to create a slurry. Set it aside.

Heat a wok or large pan over medium heat and add the cooking oil. If using ground pork, stir-fry it until cooked through and slightly browned. Remove the pork from the pan and set it aside.

In the same pan, add the mushrooms and stir-fry them for a few minutes until they start to soften.

Add the Chinese chives to the pan and continue stir-frying for another minute.

Add the cooked udon noodles to the pan and stir-fry everything together.

In a separate bowl, mix together the soy sauce, doubanjiang, chicken powder, and chili powder (if desired). Pour this sauce mixture over the noodles and stir-fry to coat the ingredients evenly.

Pour in 500ml of water and bring it to a simmer. Let the noodles cook in the sauce for a couple of minutes.

Give the starch slurry a quick stir and then add it to the pan. Stir-fry everything together until the sauce thickens slightly and coats the noodles.

Once the noodles are well-coated and the sauce has thickened, remove the pan from heat.
