Mix both types of flour in a bowl and make a well in the middle.

Pour half of the warm milk into the well and crumble in the yeast; mix a little flour from the sides and leave to activate for 30 minutes.

After 30 minutes, pour in the rest of the milk, melted butter, beaten egg, and salt; work into a smooth, non-stick dough for about 20 minutes.

Leave the dough to rest for another 30 minutes.

Prepare a walnut filling by grinding walnuts, melting butter in a pan, adding walnuts, and toasting them lightly for a minute.

Add sugar to the walnuts and mix well; if the mixture is too dry, add milk and stir frequently for another minute before taking it off the heat.

Mix in two egg yolks into the walnut filling to make it easier to work with.

Once the dough is ready, roll it out into a circle and divide it into eight triangles.

Place a bit of walnut filling on the wide side of each triangle, fold the edges, and wrap it into little rolls.
