1/4 cup roasted almonds
1 teaspoon smoked paprika
2 medium russet potatoes
1 teaspoon salt
1 cup water
1/2 cup sauvignon blanc wine

Open the vacuum-sealed package of Chilean sea bass and cut it into two portions, leaving the skin on.

Make slits in the skin of the fish to prevent curling during cooking and refrigerate for 10 minutes.
