Chop the onion in half and slice lengthwise, then place aside.

Cut the tomato in half, slice into medium strips, and place aside.

Slice the coriander and add to the chopped vegetables.

Preheat a pan over medium low flame.

Crack 2 eggs into a cup, add a pinch of salt, and mix in the chopped onions, tomatoes, and coriander.

Repeat the process to make another rolex, using a cast iron pan this time.
