Traditionally enjoyed by workers and students alike, it embodies the spirit of local cuisine—quick, filling, and flavorful. Today, the Rolex has gained popularity beyond Uganda, inspiring variations in neighboring countries and among food enthusiasts worldwide.

Spinach is nutrient-dense and adds color.
Measure 2 cups all purpose flour, 1 teaspoon salt, and 0.5 teaspoon sugar into a bowl and whisk together.
Add about 1 cup of water and 1 teaspoon of olive oil to the flour mixture and mix to form a light dough.
Knead the dough with your hands, adding more flour as needed, and let it rest for 5 minutes covered with plastic wrap.
Cut the rested dough into golf ball-sized portions and let them rest for another 5-10 minutes.
Roll each portion into thin chapatis using a rolling pin and extra flour for dusting.
Preheat a pan and cook each chapati until it bubbles, then remove and cover with a kitchen towel.
For the filling, chop 0.5 onion, 0.5 bell pepper, and 2 scallions, and slice 1 tomato and 2 ripe avocados.
In a bowl, crack 6 eggs and season with salt and black pepper.
Heat olive oil in the same pan, add the chopped vegetables, and sauté until softened.
Pour the beaten eggs over the sautéed vegetables and place one chapati on top, cooking until the eggs are set.
Flip the chapati to cook the other side until golden brown, adding butter for color if desired.
Remove from the pan and serve warm.
