300 grams peri-peri chili peppers
40 grams chocolate jigsaw chili peppers
1 cup minced garlic
bunch of thyme
2 teaspoons salt
1 teaspoon black peppercorns
1/4 teaspoon xanthan gum

Heat a pot and add sunflower oil and a mix of brown vinegar and distilled white vinegar.

Add just under 300 grams of peri-peri chili peppers and 40 grams of chocolate jigsaw chili peppers to the pot.

Add half of the minced garlic to the pot and simmer for about 10 minutes.

After 10 minutes, take the pot off the heat and add the remaining garlic to a blender jug.

Pour a little bit of the sauce from the pot into the blender jug with the garlic and blend until smooth.

Return the blended mixture to the pot and cook for another 5 minutes.

Let the sauce cool down to avoid explosions when blending hot liquids.

Add 1/8 teaspoon of xanthan gum to the sauce to help emulsify it, and blend again if necessary.

Test the pH of the sauce after it has cooled down, ensuring it is around 3.5 for shelf stability.

Bottle the sauce while it is still boiling, using sterilized bottles and caps.

Seal the bottles tightly and turn them upside down to sterilize the caps as well.

Let the bottles cool down while upside down before labeling them.
