1 teaspoon ground black pepper
1/2 cup extra virgin olive oil
2 bay leaves

Slice the red bell peppers in half and remove the stems and seeds.

Roughly chop the red bell peppers and add them to a blender bowl.

Chop the Birds Eye Chili's and long red chilies, including the seeds, and add them to the blender bowl.

Add smoked paprika, dried oregano, red wine vinegar, and the zest and juice of half a lemon to the blender bowl.

Add sea salt and ground black pepper to the blender bowl.

Blend the mixture until smooth.

Transfer the blended mixture to a small to medium-sized saucepan.

Add bay leaves and bring the mixture to a simmer on high heat.

Reduce the heat to medium and let it simmer for 30 minutes, stirring every five minutes.

After 30 minutes, remove from heat and take out the bay leaves.

Add more red wine vinegar, the remaining lemon zest, and the juice of the other half of the lemon.
