Season the diced Ozzy beef chuck with salt and pepper.
Add a little bit of grapeseed oil and rub the seasoning and oil into the beef.
Sprinkle a little bit of flour onto the beef to create a seal and thicken the sauce.
Heat a pan with a little oil and add the beef, allowing it to sear without moving it too much initially.
Chop the onion into small pieces.
Once the beef has a nice seal, transfer it to a roasting tray.
Deglaze the pan with a little white wine to lift the flavors off the bottom.
In the same pan, add a little oil and the chopped onion, covering it with a lid to start cooking.
Prepare the rest of the sauce ingredients: chop the parsley stalk and halve the garlic, bashing it to remove the skins.
Once the onions are soft and jammy, add a bay leaf and tomato paste, stirring until the paste turns a rich red color.
Add the diced tomatoes, chicken stock, fresh nutmeg, clove, and a healthy amount of smoked paprika to the pan.
Mix well and ensure the beef is nicely covered with the sauce.
Cover the roasting tray with aluminum foil and place it in the oven at 150 degrees Celsius for about 2 hours.
Cut the sweet potatoes into chunky wedges and season with smoked paprika, salt, and oil, tossing to combine.
Place the sweet potato wedges in a roasting tin and roast in the oven at 210 degrees Celsius for about 30 minutes.
After 25-30 minutes, check the sweet potato wedges and remove them from the oven once they are nicely roasted.
Check the beef goulash after 2 hours; it should be falling apart and have developed a rich flavor and color.
Serve the sweet potato wedges in a bowl with the beef goulash on top, finishing with a dollop of sour cream and a sprinkle of parsley and paprika.
