1

Soak the salt cod in water for 24 hours, changing the water several times to reduce the saltiness. After soaking, drain and rinse the cod.

2

Place the peeled potatoes in a large saucepan, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 20-25 minutes. Drain and let cool slightly.

3

In a separate pot, bring water to a boil and add the soaked cod. Cook for about 10-15 minutes until tender. Remove the cod, let it cool, and then flake it into small pieces, removing any skin and bones.

4

Once the potatoes are cool enough to handle, mash them in a large bowl until smooth.

5

Add the flaked cod, chopped onion, parsley, eggs, and pepper to the mashed potatoes. Mix everything well until you have a homogeneous mixture. Taste and adjust seasoning if necessary.

6

Using two tablespoons, shape the mixture into quenelles or oval shapes. Alternatively, you can use your hands to form small patties.

7

Heat vegetable oil in a deep fryer or a large pot to about 350°F (175°C). Carefully add the fritters in batches, frying until golden brown on all sides, about 4-5 minutes. Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
