Steam the cod until it flakes with a fork, then let it cool in a bowl.
Peel the potatoes, cut them in half, and boil them in salted water until fork tender.
Mash the boiled potatoes and let them cool.
Finely chop the onion and parsley.
Once the cod and potatoes are cooled, add the potatoes to the bowl with the cod.
Add the finely chopped onion and stir until the potatoes are well broken up and the fish is flaked.
Add about 2 tablespoons of chopped parsley and 3 eggs one at a time, mixing well after each addition.
Season the mixture with about half a teaspoon of salt, adjusting to taste.
Heat vegetable oil in a pot to between 350°F and 370°F.
Shape the mixture into croquettes about the size of a large egg, placing a piece of cheese in the center of each before shaping them back around the cheese.
Fry the croquettes in the hot oil until golden brown.
