1 cup celery
1 tablespoon curry powder
1 teaspoon thyme
1 seasoning cube
1 teaspoon ground chili pepper
1 teaspoon ground ginger
1 cup vegetable stock
1 teaspoon salt
2 tablespoons vegetable oil

Add chicken and shrimp to a mixing bowl and season with minced garlic, ground ginger, curry powder, thyme, ground pepper, one seasoning cube, salt, and a drizzle of vegetable oil; mix to combine thoroughly and leave to marinate.

In a pan, heat vegetable oil and add minced garlic; stir-fry for a few seconds.

Add one seasoning cube, curry powder, and a pinch of turmeric; stir-fry for a few seconds.

Add washed rice to the pan and stir-fry for 2-3 minutes to toast the rice slightly.

Add vegetable stock or water and season with salt; mix to combine, cover, and cook on medium heat until tender.

In the same pan, add more vegetable oil and heat slightly; add marinated chicken and shrimp pieces and stir-fry until they have lost all pinkness and are slightly browned; remove and set aside.

Add the peppers and garlic; stir-fry for 30 seconds, then add diced carrots and continue stir-frying for another minute.

If using fresh soft corn, add it now to cook for about two minutes.

Add the cooked chicken and shrimp back to the pan, season with curry powder, seasoning cube, ground pepper, and salt to taste; mix to combine and stir-fry for another minute.

Add the cooked rice and mix together to combine until the veggies and rice are evenly distributed.

Finally, add the red and green bell peppers, frozen peas, and about one cooking spoon of water; mix to combine, cover, and steam for one minute.
