Peel the outer skin off the coconut and wash it to get the white part.

Grate the coconut, using about 3 cups from two whole coconuts.

In a pot, combine 1 cup of water, 2 cups of sugar, and smashed ginger pieces; stir and place on heat.

Boil for about 10 minutes until the sugar dissolves and thickens.

Add the grated coconut to the pot and cook for about 20 minutes on medium to low heat until it reaches a thick, almost dry consistency.

Squeeze in the juice of half a lemon to cut the sweetness.

Line a square baking tin with parchment paper and press the coconut mixture into it to form a thick layer.
