Preheat oven to 375°F.
Cook spaghetti according to package instructions until al dente; drain and set aside.
Heat olive oil in a large skillet over medium heat; add onion and sauté until translucent, about 5 minutes.
Add garlic, bell pepper, mushrooms, and zucchini; cook until softened, about 5-7 minutes.
Stir in spinach and cook until wilted, about 2 minutes.
Add canned diced tomatoes, tomato sauce, nutritional yeast, basil, oregano, salt, and black pepper; simmer for 10 minutes.
In a large baking dish, layer half of the spaghetti, followed by half of the vegetable sauce, and sprinkle half of the vegan cheese on top.
Repeat the layers with the remaining spaghetti, vegetable sauce, and vegan cheese.
Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
Garnish with fresh parsley before serving.
