4 cups gluten-free oats
1/4 cup Bob's Red Mill gluten-free baking flour
1/2 cup peanuts
1/2 cup chocolate chips
1 cup packed brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup raisins
1/2 cup butter (or coconut oil for dairy-free)

Preheat the oven to 325°F.

In a large mixing bowl, combine 4 cups of gluten-free oats, 1/4 cup of gluten-free baking flour, 1/2 cup of peanuts, 1/2 cup of chocolate chips, 1 cup of packed brown sugar, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract, and 1 cup of raisins.

In a small pot, melt 1/2 cup of butter (or coconut oil) and then pour it into the mixing bowl with the dry ingredients.

Stir the mixture until all ingredients are well combined and there are no big chunks.

Dump the granola mixture into a pre-oiled 12-inch cast iron skillet and pack it down with a spatula.

Cover the skillet with aluminum foil to prevent burning, especially if using a gas oven.

Bake in the preheated oven for 40 minutes.

After 40 minutes, remove the aluminum foil and stir the granola to prevent clumping while it's still soft.

Let the granola cool before transferring it to a storage jar.
