Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
Remove from heat and stir in vanilla extract and butter until melted and smooth.
Allow the custard to cool to room temperature.
Slice the bread into even pieces, trimming the crusts if desired.
Spread a layer of custard between two slices of bread to form a sandwich.
Repeat for remaining bread and custard.
Dust the sandwiches with powdered sugar and cocoa powder.
Chill in the refrigerator for at least 30 minutes before serving.
Slice into triangles and garnish with whipped cream and fruit.
