Dive for rock lobster in the sea.
Use sea water to cook the lobster, no seasoning needed.
Prepare a broth with celery, carrots, onions, coriander seeds, fennel seeds, and black peppercorns.
Bring the broth to a boil and add the rock lobster for about 7 minutes.
While the lobster cooks, prepare the dressing with lime juice, whole grain mustard, chili flakes, garlic, lime zest, and honey.
Stir the dressing and add salt to dissolve before incorporating olive oil.
Add about 3 tablespoons of olive oil to the dressing for consistency.
Finally, mix in crème fraîche and add herbs: dill, spring onions, and coriander.
