Sabziyon ki Kadhi is a beloved dish in Pakistani cuisine, often enjoyed during family meals. It highlights the use of yogurt and gram flour, creating a creamy, tangy sauce that envelops vegetables. Traditionally served with rice, this dish is a comforting staple, especially during the colder months. Instructions

  1. 1Whisk yogurt and gram flour in a bowl until smooth.
  2. 2Add water gradually to the yogurt mixture and mix well.
  3. 3Heat oil in a pot over medium heat and add mustard seeds until they pop.
  4. 4Add cumin seeds, chopped onion, and sauté until golden brown.
  5. 5Stir in ginger and garlic, cooking for another minute until fragrant.
  6. 6Add turmeric powder, red chili powder, and salt, mixing well.
  7. 7Pour in the yogurt mixture and bring to a boil, stirring continuously.
  8. 8Reduce heat and let it simmer for 15-20 minutes until thickened.
  9. 9In a separate pan, heat oil for frying.
  10. 10Drop spoonfuls of the vegetable mix into the hot oil and fry until golden.
  11. 11Remove the pakoras and drain on paper towels.
  12. 12Garnish the kadhi with coriander leaves and green chilies.

  • 1 kg chicken, cut into pieces
  • 2 cups yogurt
  • 2 large onions, finely sliced
  • 2 tomatoes, chopped
  • 1/4 cup ginger-garlic paste
  • 1/4 cup oil
  • 2-3 green chilies, slit
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. 1Heat oil in a large pot over medium heat.
  2. 2Add the sliced onions and sauté until golden brown.
  3. 3Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes.
  4. 4Add the chopped tomatoes and cook until they soften.
  5. 5In a bowl, mix the yogurt with turmeric, red chili powder, coriander powder, and salt.
  6. 6Add the chicken pieces to the pot and stir well to coat with the onion-tomato mixture.
  7. 7Pour the yogurt mixture over the chicken, mixing thoroughly.
  8. 8Cover the pot and let it cook on low heat for about 30-40 minutes, stirring occasionally.
  9. 9Once the chicken is tender and the oil separates, sprinkle garam masala on top.
  10. 10Garnish with fresh coriander leaves before serving.
