1 tbsp lemon juice
1 tsp turmeric
1 tbsp Mandi mix (Hawaij)
2 tbsp olive oil or ghee

1 tsp cumin
1 tsp coriander
1 tsp black pepper
1 tsp cinnamon
1 tsp cardamom
½ tsp cloves
½ tsp nutmeg
½ tsp smoked paprika
2 cups basmati rice (soaked 30 mins)
1 large onion, thinly sliced
4 cloves garlic, crushed
1 small piece of cinnamon stick
3 cardamoms
2 bay leaves
4 cups chicken stock or water
A few saffron strands (soaked in warm milk)
A small piece of charcoal (for smoking)
Fried onions
Toasted/roasted nuts

Marinate the chicken with yogurt, lemon juice, turmeric, Mandi mix, olive oil or ghee, and salt. Let it marinate overnight.
